Duck breast and apple savoury loaf

Preparation
  1. Peel and core the apples then dice.
  2. Remove the fat from the smoked duck breast slices and cut into small pieces. Preheat the oven to 180°C (gas mark 6).
  3. In a terrine dish, beat the eggs, then gradually add the flour and baking powder followed by the milk. Stir in the diced apple, grated gruyere and pieces of duck. Season with pepper. Mix thoroughly.
  4. Butter the loaf tin and dust with flour. Pour in the mixture, place the tin in the middle of the oven and cook for approximately 30 minutes.
  5. Once cooked, remove from the cake tin and leave to cool.

  • 2 small apples
  • 120 g smoked duck breast (sliced)
  • 3 eggs
  • 180 g flour
  • 1 sachet baking powder
  • Pepper
  • 50 g grated gruyere
  • 10 cl milk
