Onion and Roquefort tarte tatin

Preparation
  1. Slice the onions and sauté in a cooking pot with a little olive oil.
  2. When the onion starts to turn a lovely golden colour, caramelise with a tbsp of caster sugar.
  3. In a saucepan, melt the Roquefort on a very low heat, stirring continuously.
  4. Add the 2 beaten eggs.
  5. In a tart tin, spread out the onions and cover with the Roquefort mixture before topping with the pastry.
  6. Cook at 180°C (gas mark 6) for approximately 15 mins.
  7. In the meantime, prepare your balsamic vinaigrette with 3 tbsp of olive oil and 1 tbsp of balsamic vinegar, salt & pepper.
  8. Turn out the tarte tatin from the tin and serve warm on a bed of dressed salad.

  • 6 large yellow onions
  • 150 g Roquefort
  • 2 eggs
  • 1 tbsp caster sugar
  • Olive oil
  • Balsamic vinegar
  • 1 sheet shortcrust pastry
  • Rocket
